What Katie Cooks
Here's another small round up of some meals I've cooked recently. I typically like to make meals that are fast and easy, so these are some ideas to spark new food ventures in your life!

Okay, so the photo above-- what is it??

Hoisin Tofu with Veggies
*tofu sautéed in hoisin sauce
*onions, peppers, and mushrooms sautéed in olive oil
*steamed white rice
*cilantro
*veggie dumplings (store bought)

Keeping the veggies separate from the hoisin tofu kept this meal from tasting too hoinsin-y (the technical term). I just love veggie dumplings, so we pick them up from our local grocer pretty regularly. Tossing these in a pan with liquid aminos is so good! I like to serve them with ginger dressing on the side.

What is it?

Tomato Gouda Avocado Toast
*7 sprouted grains bread
*gouda cheese
*2 egg whites
*avocado
*tomatoes
*pepper

This meal was super simple and showed off just how beautiful and delicious my garden tomatoes have been. The gouda is smoky and gives the effect of bacon very nicely. I'm pretty sure I should make this for lunch today...

Tofu Scramble with Cabbage Hash
*medium firm tofu with turmeric, salt, and pepper
*napa cabbage
*orange bell pepper
*fresh cilantro
*chives
*avocado
*wheat toast

This one isn't that photogenic, but it tasted so good! Johnny's been having some food allergies lately (we think eggs may be contributing) and I really wanted to try tofu as an egg substitute. It worked SO WELL and the turmeric even makes the tofu look like eggs. I used this method with meatless sausage and pico in a breakfast burrito this same week and it was amazing!

Like I've said before, I'm no food blogger and I'm certainly no food photographer, this is just a fun way to share some meal ideas that we've had in the past few weeks! Happy cooking!!

Dance Like You Own the Place

Our New Local Favorite: The Brick
As I mentioned before, some of our favorite friends just opened up a pizza place downtown.  Johnny and Hope have a new habit of skipping breakfast and grabbing pizza right when they open at 11.  I'm trying to be a responsible mother and remind them that maaaaaaaybe eating pizza 4 or 5 times a week isn't the healthiest thing in the world, but I know everyone's just excited about The Brick and I think it will end up taking care of itself.  I mean, it's not everyday that your friends open a pizza joint and it just happens to be some of the tastiest pie you've ever eaten.  Eventually we'll be back to eating pizza once or twice a week.  Eventually.  ;)

Favorite things:
*The spinach pizza is the yummiest I've ever eaten.  Seriously.
*The beer mugs are frosty.  FROSTY.  It's the best.
*Fresh garlic knots.  Heaven.
*Music picks.  See photo above.

As you can probably tell, the Sheltons are very enthusiastic about food.  Sometimes I wonder what our friends must think of us when we get lost in the downward spiral of food talk.  I'm pretty sure Johnny could talk about food for an entire night if someone was there to listen.  No joke.  :)

Also, as you can see from the photos of Poe, she's an entertainer.  This night she was insistent on dancing for ANYONE in the place who would watch.  This kid does not know a stranger.  So full of spunk!

We have a busy weekend ahead of us, so time for me to wrap up all the work things I can!  Happy Thursday, friends!  xo.

Let's Talk Food

Pinterest is so good for recipes.  I mean, it's really great for lots of things, but anytime I'm telling someone about Pinterest, I always have to mention all of the food on there.  It helps me find new recipes and keep them semi-organized.  Oh!  And let's not forget MOTIVATING me to make said recipes by dangling mouth-watering pictures in front of my face.  Sometimes I need that.  Otherwise I flip through my recipe book, feel indecisive, and then we get take out.  Okay, if I'm really being honest here, I don't actually flip through my recipe book.  I just think about flipping through it.  ;)




Okay, okay, so most of my pins are either desserts or breads, but those are some of the things I love most in life.  I guess I should start pinning more meals...
