July Garden Goods

Whew.  How is it the end of July already??  This month we had more large amounts of rain, so that definitely took its toll on some of my plants.  We're finally getting tomatoes, our basil is doing great and has just started bolting, and these little peppers that I THOUGHT were bell are actually some sort of super spicy, tasty guy.  The cucumbers are fat and delicious and we've finally started getting green beans from the seeds I planted!  All in all, I've loved the July garden!

I'm not the best at using up my basil, so my favorite thing to do with it is to make these tomato/basil pizzas with a garlic sauce.  Seriously, so good!

July garden, you were great to us!  Now, let's see what August holds.

A Most Welcome Hair Change

This week my beautiful friend, Erin, gave my hair a little update.  Honestly, I've been dying for a change, and I'm totally in love with my new 'do.  She switched up my normal red and then added in peaches and pinks with Hot Heads hair extensions.  This is my first experience with tape-in hair extensions and wow... they are so comfortable and lovely.  I've used clip-in and micro-bead extensions in the past, and these are BY FAR the best experience I've had.

Summer Squash Quesadillas with Blue Apron

My family has done quite a bit of eating out this summer.  I don't know if this happens to you, but we get busy, we get low on groceries, and the easiest (laziest) thing to do is frequent our favorite local eatery.  I was thrilled to get our Blue Apron shipment in the mail last week, mainly because I didn't even realize how much I've missed cooking!  We've been using Blue Apron off and on for about a year now, and I have only good things to say.  They ship all the fresh ingredients straight to your house, and then give you step-by-step instructions to make your meal.  You can choose a two person plan or a family plan, and you can tailor the food to your needs.  This time we chose the vegetarian and fish package (we usually go straight vegetarian), and I actually tried my hand at cooking salmon last week!  AND it was a success!  I've never even attempted that at home before!

Hope helped me make these summer squash quesadillas, and wow... they were absolutely delicious.  We even added a few extra things in from the garden to make them more our own!

Hope prepped the quesadilla assembly area while I put the veggies in the skillet and boiled the ears of corn.  I love having helping hands in the kitchen.  The girls always feel so excited and proud when they sit down to eat something they helped make.

My family was particularly fond of this meal, and it was quick and easy to make!  I love getting stretched in the kitchen, and though this is something I would make on my own, it was nice to have all of the veggies, cheeses, and spices in the same box.  Summer may be slowing down my cooking game, but as a person who loves cooking and baking, having a reason to get back to it felt great.

I usually do captions for my Snapshots posts, but I'm just going to say #summerwhirlwind this time around.  Summer has been great for us this year, and oh-so busy.  I've been looking over homeschool curriculum over the past couple of weeks and I'm getting pretty excited for this school year.  We're abandoning computer classes entirely and going back to only books, per Hope's request.  Before we jump back into school in a little over a month, we still have a vacation coming up and my girls' weekend with pals is right around the corner.
